A Celebration of Chablis
On March 19, Bonterra Trattoria invites you to an intimate winemaker dinner celebrating the elegance and terroir of Chablis, featuring wines from Domaine Laroche.
We are honoured to welcome Romain Chevrolat, whose winemaking journey spans some of France’s most prestigious estates. Since joining Domaine Laroche in 2023, Romain has continued to elevate the expression of Chablis’ iconic Kimmeridgian soils, crafting wines defined by clarity, minerality, and balance.
The evening begins with a reception at 6:00 PM, featuring canapés and bubbly, followed by a seated five-course dinner at 6:30 PM, with each course designed to complement a specific Laroche cuvée. From delicate seafood preparations to richly layered main courses and a Chablis-poached pear dessert, this menu showcases the versatility and finesse of these wines.
Guests will enjoy commentary from Romain throughout the evening, offering rare insight into the terroir, techniques, and philosophy behind each glass.

Romain Chevrolat – Winemaker
Romain Chevrolat hails from a distinguished family of Champagne producers, originally from Les Riceys, a charming commune renowned for its prestigious Rosé-des-Riceys wine, located just 50km from Chablis. Growing up in the southern Champagne region, Romain developed a deep passion for the world of wine. This passion led him to pursue a university education, where he graduated as an Oenologist from Dijon University in 2015.
His early career saw him training at some of the most renowned estates in the industry, including Maison Louis Latour and Domaine de la Romanée-Conti. Romain’s journey then took him to Burgundy, before making a significant move to the Rhône Valley in 2018, where he worked as an Oenologist at the acclaimed Domaine E. Guigal. During his time there, he contributed to remarkable successes over five vintages. However, the call of the Kimmeridgian soils — the unique terroir of Chablis — was strong, drawing him back to his roots in Les Riceys.
In July 2023, Romain joined Domaine Laroche, where he is committed to continuing the exploration and expression of the exceptional terroirs that define the estate in Chablis, elevating the finesse and character of its wines to new heights.
