Chef Ben hosts Calgary Stampede Dinner Theatre!
This past Saturday, Chef Ben Mill of Bonterra Trattoria gave a live cooking demonstration at the Calgary Stampede Dinner Theatre in the BMO Centre!
As a classic Italian staple, easily done well at home, Ben chose to make meatballs in tomato sauce.
Below, we’ve shared Ben’s recipe for his delicious meatballs! Please note, this is a large-batch recipe– perfect for an afternoon of rolling meatballs to be cooked fresh, or frozen for a later date!
2.5 kg of ground beef
375 g of Grana Padano
250 g Focaccia, soaked in milk and drained.
15 g of Basil
10 g of Italian Parsley
5 g of Sage
Salt, pepper and chili flakes to taste
Mix all ingredients in a large bowl (careful to not over mix).
Roll into 1 inch balls (place extra mixture on a flat tray to freeze).
Bake for 15 minutes at 350 degrees,
Simmer meatballs in tomato sauce in a pan. Serve as is, over pasta, on a sandwich or on a pizza.
